Your stock count system — tracks how much of each ingredient you physically have on hand before and after every event. Count before you leave. Count when you get back. The difference is what you used. Compare that to what your recipes say you should have used to find waste, over-portioning, or theft.
What is Inventory Counting?
Inventory is a snapshot in time — not a price list. It tells you how much product you physically have on your trailer right now. Do a Pre-Event Count before you leave and a Post-Event Count when you return. The system calculates what you used and compares it to your recipe quantities to show you where money might be leaking.

Pre-Event Count
Count everything on your trailer before you leave for an event. This is your Opening Inventory — what you started with.
Post-Event Count
Count everything that came back after the event. This is your Ending Inventory — what is left over.
