Your food cost target is a goal, not a rule. Lower targets mean higher sell prices and more profit per sale. The right target depends on your market, your competition, and what your guests will pay. Most successful food trailer operators target between 20% and 28%. Anything consistently above 32% is a profit problem worth investigating.
